Three types of asparagus on a baking sheet

A is for Amazing Asparagus

One of the first foods that signals the start of spring is the appearance of fresh asparagus at local farmers’ markets and grocery stores. Just as spring is a time of new beginnings, asparagus is one of those veggies that remind us to embrace a natural cleansing of mind, body, and soul.

Think of those moments when you feel at your strongest and healthiest, you could conquer the world. Connect with your best moment, that time when you felt your full life force coursing through you. That is the same power that a spear of asparagus contains in its first few weeks above ground.

To name just a few of the wonderful benefits of asparagus, it is loaded with antioxidants. It’s one of the top ranked fruits and vegetables for its ability to neutralize cell-damaging free radicals, which has been shown to help slow the aging process. It’s also loaded with vitamin A, C, E, K, and especially vitamin B. When we are dealing with stress, we tend to lose vitamin B vitamins very quickly. This herbaceous plant is high in very easily absorbable B vitamins.

“When we harvest asparagus, it’s really just a sprout on its way to becoming a much larger plant. Over time, humans have learned to recognize when a spear of asparagus is at its peak for consumption. It’s a lesson that transfers to our own lives. Sometimes people push circumstances too far, aiming for more and more growth. We don’t always have to let the full cycle play out. We can learn to recognize when a project meeting or conversation has reached its best moment, it’s a gracefully and at that point, harnessing the power of that peep time for the best ultimate outcome.”
