Edamame Spaghetti

Finding healthy yet tasty alternatives to traditional noodles can be tough. Well look no further! Edamame spaghetti is gluten-free, vegan, and nutritious. One serving contains 24 grams of protein and 11 grams of fiber! It also packs in Vitamin A, vitamin C, calcium and iron. The only ingredient is organic edamame (green soybeans) and it has about half the carbs of traditional pasta.

But how do they taste? Delicious! They can be dressed up with any sauce or add-ins you like. A lighter sauce seems to pair well, like the lemon pesto recipe below. Costco sells a 2 lb box of Explore Asian organic pre-made edamame noodles. All you have to do is boil the noodles and decide how you want to flavor them. So easy and so nutritious!

 

Lemon Pesto Sauce

  • 2 cups of fresh basil
  • ½ cup of walnuts
  • ½ cup of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 3 tablespoons of nutritional yeast
  • 1 clove of fresh garlic, freshly chopped
  • Sea salt and freshly ground pepper to taste

 

Pulse basil, walnuts, and garlic in a food processor to combine. Add in olive oil, sea salt, pepper, lemon, and nutritional yeast, and pulse a few more times to combine. Enjoy!
