Healthy Milk and Cookies

 

Have your cake (or cookies in this case) and eat it too! If you have ever made any kind of nut milk before you may have wondered what to do with the nut pulp. Well instead of letting it go to waste you can use it to make Cashew Brownie Bites!

Cashew Brownie Bites

Ingredients:

  • 1 cup cashew pulp
  • 1/4 cup pecans
  • 1/2 cup dates pitted
  • 3 tbsp cacao powder
  • 2 tbsp shredded coconut
  • 1 tbsp honey
  • 1/4 tbsp coconut oil

 

Directions:

Place all ingredients in blender except honey. Blend until smooth and then add the honey and blend until sticky.  Line a baking pan with parchment paper and press in mixture then freeze overnight.  Then cut into small treat sized slices or roll into fudge balls.

Store bought nut milk often has unneeded additives, so why not make your own? It’s easier than you may think and much more fresh. Just follow the recipe below and feel free to sub in any kind of nut (almond, cashew, pecan).If you want to keep it super simple, you can just use nuts and dates. Only two ingredients!

Cashew Milk

Ingredients:

  • 1 C almonds or Cashews
  • 2 whole dates (pitted)
  • ½ vanilla bean
  • cinnamon
  • cacao powder

 

Directions:

Soak nuts overnight.  Strain in colander,  Put 1 C soaked nuts and 3 C water in blender or vitamix.  Add vanilla bean, cinnamon, or cacao powder (optional).  Store in nut milk bag or colander.
