Israeli Cous Cous with Homemade Pesto

Israeli Cous Cous with Homemade Pesto

Ingredients

In Vitamix Blender, add

  • 2 bunches of basil –full of anti-inflammatory antioxidant and antibacterial properties!
  • 2 or more cloves of garlic depending on size
  • Add a handful of pine nuts or walnuts –high in nutrients like omgea-3 and vitamin E
  • Drizzle olive oil and blend adding additional oil if needed
  • Mix Pesto into Cous Cous
  • Add 1 cup or more of chopped scallions
  • Add one halved orange tomato- there are so many wonderful varieties of sweet small and colorful miniature tomatoes packed w/ flavor
  • Mix and sprinkle pine nuts on top

Instructions

To Cook Cous Cous

  • Boil salted water and add Cous Cous
  • Then, turn heat off and let the Cous Cous absorb the liquid (Cous Cous will be less gummy with this method than boiling)
