In Vitamix Blender, add
  1. 2 bunches of basil –full of anti-inflammatory, antioxidant and antibacterial properties!
  2. 2 or more cloves of garlic (depending on size)
  3. Add a handful of pine nuts or walnuts –high in nutrients like omgea-3 and vitamin E
  4. Drizzle olive oil and blend, adding additional oil if needed
  5. Mix Pesto into Cous Cous
  6. Add 1 cup or more of chopped scallions
  7. Add one halved orange tomato- there are so many wonderful varieties of sweet, small and colorful miniature tomatoes packed w/ flavor
  8. Mix and sprinkle pine nuts on top
To Cook Cous Cous
  1. Boil salted water and add Cous Cous
  2. Then, turn heat off and let the Cous Cous absorb the liquid (Cous Cous will be less gummy with this method than boiling)
