Put an Egg On It
Breakfast should set you up for a healthy, energy filled day. Local Santa Barbara café Crushcakes inspired this delicious farmers market morning breakfast that will do just that. Protein packed quinoa and egg paired with nutrient rich veggies makes for a hearty dish that will leave you feeling satisfied and ready to take on your to do list.
Eggs contain a wide variety of vitamin and nutrients and also help raise HDL “good” cholesterol. Egg yolks contain lutein and zeaxanthin, two phytochemicals that may reduce the risk of cataracts and macular degeneration. They are a quality protein source with all the essential amino acids making them the perfect topping to your breakfast bowl.
Quinoa is naturally gluten-free, making it a great alternative to oats. Also, it contains iron, B-vitamins, magnesium, vitamin E and fiber. Quinoa is one of the few plant foods considered a complete protein. We recommend using red quinoa in this recipe for a chewier consistency, but white can always be used as well.

Farmers Market Morning
(serves 2)
2 fresh eggs
1 cup of dry quinoa
Diced avocado
Cherry tomatoes
Mushrooms
Red Onions
Red Peppers
Balsamic mixed with olive oil
Cook quinoa on stovetop. Sauté onions, peppers and mushrooms and add to quinoa. Optional add in of avocado and tomatoes. Top with poached egg and drizzle balsamic mixed with olive oil on top. Enjoy!
