  1. 1 c. Trader Joe’s Organic Quinoa, cooked according to package directions
  2. 1 small organic red pepper
  3. 1 small organic yellow pepper
  4. 2 stalks of organic celery
  5. 6 organic portobello mushrooms
  6. 1-2 organic green onions
  7. 1 T. fresh organic parsley or cilantro
  8. Quinoa, a grain used by the ancient Incas, has the most protein of any plant, but you can kick up the protein in this dish even more by adding cooked chickpeas or black beans.
  1. Top off your salad by mixing 1 Tablespoon of Dijon with a 1/4 cup of organic olive oil, a clove of crushed garlic and a pinch of sea salt.
