Warm a medium soup pot over medium heat. Add onion minced ginger and garlic, vegetable stock, water and tamari. Bring to a boil, then simmer for 30 minutes.
Meanwhile, warm the oil in a medium skillet and add shiitake mushrooms and a pinch of salt. Cook about 4-6 minutes, then set aside.
Steam broccoli, carrots, and pea pods.
Separate the garnishes into bowls.
Once the broth is complete, add mushrooms, broccoli, carrots, pea pods, and garnishes of choice. Mix in chili sauce or extra tamari sauce to taste and enjoy!
