Easy Healthy Zen Veggie Pho
With colds and the flu traveling around this winter, we could all use a bit of comfort food. This easy vegetarian pho recipe is simple enough to throw together even when you’re feeling under the weather. Also, it’s packed with lots of immune-boosting nutrients that are sure to either help maintain your health, or nourish you back to it!
The recipe includes garlic and ginger, which I always recommend as rich sources of powerful antioxidants.
Easy Healthy Zen Veggie Pho
Ingredients

- 3 cloves of garlic
- 1 large white onion
- Ginger I use a 5-inch piece
- 4 cups vegetable broth I recommend Organic Pacific
- 4 cups water
- 2 tablespoons tamari sauce
- 1 tablespoon avocado oil
- 5 ounces shiitake mushrooms
- Tofu I recommend organic extra-firm
- Pea pods
- Broccoli
- Carrots
- Salt
- Pepper
Garnishes
- Mung brean sprouts
- Fresh Basil
- Cilantro
- Thinly-sliced jalapeño
- Lime
Instructions
- Warm a medium soup pot over medium heat. Add onion minced ginger and garlic, vegetable stock, water and tamari. Bring to a boil, then simmer for 30 minutes.
- Meanwhile, warm the oil in a medium skillet and add shiitake mushrooms and a pinch of salt. Cook about 4-6 minutes, then set aside.
- Steam broccoli, carrots, and pea pods.
- Separate the garnishes into bowls.
- Once the broth is complete, add mushrooms, broccoli, carrots, pea pods, and garnishes of choice. Mix in chili sauce or extra tamari sauce to taste and enjoy!
