Cauliflower Rice
Ingredients
- 1 Large Head of Cauliflower
- Tamari instead of soy sauce to avoid gluten
- ½ C Diced Carrots
- ½ C Peas
- ½ C Diced Onions
- ½ C Mushrooms
- 1 clove of crushed Garlic
- 1 Egg optional for binding purposes
Instructions
- Cauliflower can be riced with knife or food processor
- Brown riced cauliflower for about 5 minutes, then scramble/whip egg and pour over riced cauliflower stirring until cooked
- Sauté onions, carrots, and garlic in olive oil until starts to soften, add to riced cauliflower
- A few minutes before fully cooked add mushrooms and peas. Pour tamari over mixture
