Cauliflower Rice

Cauliflower Rice

Ingredients

  • 1 Large Head of Cauliflower
  • Tamari instead of soy sauce to avoid gluten
  • ½ C Diced Carrots
  • ½ C Peas
  • ½ C Diced Onions
  • ½ C Mushrooms
  • 1 clove of crushed Garlic
  • 1 Egg optional for binding purposes

Instructions

  • Cauliflower can be riced with knife or food processor
  • Brown riced cauliflower for about 5 minutes, then scramble/whip egg and pour over riced cauliflower stirring until cooked
  • Sauté onions, carrots, and garlic in olive oil until starts to soften, add to riced cauliflower
  • A few minutes before fully cooked add mushrooms and peas. Pour tamari over mixture
